Apostle didn’t start in a factory. It started in a home kitchen in Paekākāriki on New Zealand’s Kāpiti Coast, with Mat obsessing over ferments and Lydia backing him (and quietly knowing it was getting serious).
What began as homemade hot sauce for friends turned into weekend market stalls. What happened next? People kept coming back. Bottles sold out. The “this is actually really good” comments turned into “where can I buy more?”
That’s when Apostle was born.
Mat is the flavour brain - endlessly experimenting, balancing heat with fruit, acid, smoke and depth. Lydia is the creative force - shaping the brand, the storytelling, the beautiful, saint-inspired labels that give Apostle its unmistakable look. Together, they’ve built something that feels thoughtful, a little bit reverent, and completely unpretentious.
